Dry Cured Traditional Breed Gammon Joint. Perfect for roasting as a main course, or make your own delicious Christmas Ham.
Christmas Ham Recipe:
Just place your gammon in a pan and cover with water. Add a few tablespoons of molasses or treacle, a few bay leaves, a teaspoon of cloves, a tablespoon of peppercorns, a few shards of cinnamon and a star anise until cooked through (or longer for a more tender ham).
Once cooked, remove from the water and allow to cool slightly. Remove the skin but leave about 1cm of the fat. Score in a criss cross pattern, then stud the ham with more cloves. Mix up some brandy, a tablespoon of mustard powder, and some brown sugar and glaze the top. Put in the oven on 180 degrees until the fat is browning. Glaze more than once during cooking for a sweeter/tastier glaze!
